Shinshu Soba Noodles

Nagano, AKA “Shinshu” is a paradise for buckwheat. The drastic difference in temperature between day and night, along with mountain soil rich in volcanic ash, create ideal conditions for growing the grain. And the area is home to the largest number of soba shops in all of Japan. There are many varieties of this premium quality Shinshu Soba, depending on the type of flour used and how it’s made into noodles. The names of these varieties also changes based on how it’s eaten and even the time of year in which it’s produced. At the Sasaki Soba Club in Matsumoto City, you can try soba from one of four corners of the prefecture, on a weekly rotation. Try it with Himalayan rock salt while listening to some smooth jazz.
