Wild Boar Cuisine

Mt Amagi, Izu is one of Japan’s top 3 wild-boar breeding areas. When stewed, the fat of boar meat shrivels up like a Peony flower, giving it the name ‘Peony Stew’. One of the traditional dishes here is wild-boar meat in a miso broth with Shiitake mushrooms, Daikon radish, spring onions and burdock root. The miso, Awase Miso, is made especially for this dish. Hunting is carried out from mid-November to late March.
