Kadoya Soba

Kadoya Soba opened its doors 250 years ago in Niigata Prefecture (next to Gunma). Hegi-soba (buckwheat vermicelli noodles) are slightly stiffened soba served on a wooden square plate named Hegi, which is the specialty of this restaurant. They make soba every morning by hand and use mountain water, which is the secret of their deliciousness. Since this area is blessed with rich nature and palatable water from the mountain, they use this for cooling the boiled soba. We recommend you eat the soba with local Sansai (edible wild plants) Tempura.
